What is the cell size of your output rasters?  This is likely the cause of the large file sizes.   For example,  one meter resolution for the state of Minnesota generated files closer to TB in size rather than GB.

I'd look into Jarlath's suggestion unless you need a capability outside the suggested tools.

It seems that much of the support documentation assumes you want to use mosaic datasets which I cannot in this case.
