If you connect to SQL Server with SSMS then you will see that the database has Schema.tablename In ArcGIS (e.g. Pro Catalog, Catalog) it will always show the full Database.Schema.Tablename because Esri use the fully qualified name. When you bring data into the map you can rename it. Renaming the featureclass directly in Catalog to remove the database name will not "stick". One resolution is to create a table alias. Users will still see the full name in Catalog views, but Pro/ArcMap will use the alias when added to a map.
